Tony Liartis
Director of Food & Beverage

Tony was the Director of Food & Beverage at the Forbes Four-Star Watercolor Inn and Resort in Santa Rosa Beach, Florida, prior to joining the Nemacolin Woodlands Resort team. Previously, Tony spent six years with the Forbes Five-Star Sea Island Resort in Sea Island, Georgia, where he progressed through all Food & Beverage operations, with numerous promotions. As Assistant Food & Beverage Director at Sea Island, he oversaw all dining outlets and banquets at the Lodge and Retreat specifically, including the Forbes Five-Star Georgia Room Restaurant.

He has a B.A. degree from Hobart and William Smith Colleges and also trained at Les Roches in Switzerland, getting a post-graduate Diploma in International Hotel Management, Hospitality. Additionally, Tony has completed his first level of certification in the Court of Masters Sommeliers.

Executive Chef

In 2000, Chef Sean Eckman graduated from Indiana County Technology Center's culinary program and with Honors at Indiana University of Pennsylvania's Academy of Culinary Arts. Upon completing culinary school, Chef Eckman moved to West Palm Beach, Florida, to complete an externship at the Breakers Hotel, then a Mobil Five-Star, AAA Five-Diamond Hotel, before being the only extern to be hired at L'Escalier, a fine dining restaurant on the resort's property.

In April 2008, Chef Eckman found himself at Nemacolin Woodlands Resort as Chef de Cuisine of Aqueous. In 2010, Chef Eckman was promoted to spread his culinary creativity at Nemacolin as Executive Sous Chef of Fine Dining. In this role, he used his culinary expertise to enhance the dining experience in Lautrec, Aqueous and Autumn. Now, five years later, Chef Eckman has the opportunity again to diversify himself as the Executive Chef of Nemacolin, taking control of culinary operations across the property and jumping into some front of the house management as well.

He is always excited to keep learning and enjoys new challenges as he progresses in his career.
