Nemacolin’s Latest Construction Project Is a Sweet One

FARMINGTON, PA (November 2, 2016) – Nemacolin Woodlands Resort advises guests to “Expect the Unexpected,” and it challenges associates to take every guest experience to the next level. With those philosophies in mind, executive pastry chef Scott Tennant and his team decided to raise the bar – and the roof – this holiday season. 

Nemacolin’s pastry shop is partnering with the carpentry shop to create the most extraordinary holiday gingerbread creation in resort history. This year the lobby of the Chateau Lafayette – one of three hotels on the 2,000-acre property – will feature a “bakery” made from real gingerbread. Measuring 12 feet tall, 14 feet long and 12 feet deep, this confectionery structure will be big enough for guests to walk inside. And there they’ll find an actual baker decorating gingerbread cookies and offering samples.

In past years, the pastry team has used gingerbread to make houses, a train and even a castle … but never a structure large enough to walk through. Though 2016 has been a big year in terms of construction projects at the resort – from a grand new Chateau entrance that was revealed in April to the development of a second Pete Dye golf course that’s set to open next summer – the real inspiration for the colossal gingerbread “building” was Nemacolin’s guests themselves.

Each year during the week of Thanksgiving, the pastry chefs erect their gingerbread creation in the Chateau lobby. With no curtains or structures in place to obstruct their view, visitors love watching the daily progress and asking questions …or making suggestions.

“Guests always come up and say that as soon as they walk into the lobby, they smell the gingerbread and crave it … and we should give some out,” Tennant says. “So I thought if we’re going to give out gingerbread, we might as well make it so guests can walk right into a bakery to get it!”

Nemacolin’s carpentry shop began working on the wood base in early October and will finish its part of this ambitious project in early November. The carpenters are building it in their shop and labeling each section, then will take everything apart and transport it to the Chateau lobby for reassembly. The pastry team takes over then and will complete the project by Wednesday, November 23.

Between the carpentry and pastry teams, a total of 15 people will spend 600 to 800 hours creating the giant gingerbread “bakery.” With 900 square feet of walls that need to be covered in sweet stuff, Tennant estimates that it will take more than 1,000 pounds of gingerbread and 1,000 pounds of royal icing to make the shop.

The finished project will be open and serving gingerbread from Thanksgiving through New Year’s Day. Nemacolin welcomes all visitors who want to watch the progress or visit the finished structure, whether or not they’re staying at the resort, which – as always – will be fully decorated for the holidays.

A great time to visit is during the annual “Light Up Nemacolin” celebration on Friday, November 25, when the resort officially kicks off its holiday season.
