Chef de Cuisine, Lautrec
Self-taught Chef Dave Racicot began his tenure at Nemacolin as Chef de Partie of The Golden Trout Restaurant. A year later, he was promoted to the resort’s Chef Tournant. Still looking to expand his education, he headed to Las Vegas, where he worked at AAA Five-Diamond and Mobil Five-Star restaurants Picasso and Le Cirque. In 2004, Chef Racicot returned to Nemacolin to open Aqueous at Falling Rock. He and his team took the restaurant from a progressive idea to AAA Four-Diamond restaurant in just six months of its, opening. In early 2007, he accepted the opportunity of a lifetime, to take the helm of Nemacolin Woodlands’ flagship restaurant, Lautrec. In just a few short months, Lautrec was transformed. The menu concept, thought process and emotional connection to food became the focus. While maintaining the high profile of AAA Five-Diamond and Mobil Five-Stars, Chef Racicot continues to strive each day towards further success for not only himself but for those around him.
Reservations are strongly recommended. The dining experience can be lengthy and most guests should consider Lautrec to be their entertainment for the night. Proper attire is business, cocktail or evening wear. Jackets are requested, but not required for gentleman. Denim and athletic wear are not permitted.
