In 2000, Chef Sean Eckman graduated from Indiana County Technology Center's culinary program and with Honors at Indiana University of Pennsylvania's Academy of Culinary Arts. Upon completing culinary school, Chef Eckman moved to West Palm Beach, Florida to complete an externship at the Breakers Hotel, then a Mobil Five-Star, AAA Five-Diamond Hotel, before being the only extern to be hired at L'Escalier, a fine dining restaurant on the resort's property.
In April 2008, Chef Eckman found himself at Nemacolin Woodlands Resort as Chef de Cuisine of Aqueous. In 2010, Chef Eckman was promoted to spread his culinary creativity at Nemacolin as Executive Sous Chef of Fine Dining. In this role, he used his culinary expertise to enhance the dining experience in Lautrec, Aqueous and Autumn. Now, five years later, Chef Eckman has the opportunity again to diversify himself as the Executive Chef of Nemacolin, taking control of culinary operations across the property and jumping into some front of the house management as well.

At the start of her career, Holly worked at two of Philadelphia's most honored restaurants, Passerelle and Marmont. She then signed on as an opening staff member of Chef Georges Perrier's restaurant, Le Mas Perrier. In 2004, Smith had the opportunity to custom blend wine at The Steven Kent Winery with a select group of Ritz-Carlton sommeliers, wine directors and food & beverage professionals. During the 2005 and 2006 harvests, she worked in the vineyards at the renowned Opus One and Cain Cellars wineries. Smith then opened ENO, a wine, cheese and chocolate tasting room at the Laguna Niguel Ritz-Carlton. Before her time at the Laguna Niguel Ritz-Carlton, she spent nearly five years as Hotel Sommelier at The Ritz-Carlton's Marina del Rey property, where she developed a sophisticated yet approachable style that endeared her to customers.

In 2008, Smith's journey took her to Los Angeles, where she was part of the opening team at Rock Sugar and established the current beverage and wine program. She was appointed Fine Dining Manager in addition to her Sommelier title three months into opening the restaurant. Later, she accepted the position of National Sales Director for a small boutique winery, Domenico Wines. Holly was involved in everything from the inspection of the vines and grapes to the harvest as well as the crush, winemaking and final bottling.
Returning to her home state, Holly accepted a position as Food and Beverage Manager of Falling Rock at the luxurious Nemacolin Woodlands Resort. In 2010, she led the Falling Rock team to achieve their first Forbes Five-Star award. Holly was quickly promoted to the Director of Wine and Spirits for the resort in the fall of that same year and added Fine Dining to her title shortly after. Now, as an accomplished Director of Fine Dining, Wine & Spirits and Food & Beverage Training, she leads all Fine Dining outlets at Nemacolin, including Autumn, Aqueous and the Forbes Five-Star, AAA Five-Diamond Lautrec team, along with concentrating on the resort's wine list and conducting weekly educational classes for guests at the resort's Académie du Vin.
